We make every effort to select the finest quality catch fresh fish that our local fishers have to offer. Variety of fish available is of course controlled by weather conditions and seasons.
We are strong supporters of the local fishing industry ensuring we have fresh product all year round. The species available changes with the seasons, offering fresh whole fish, cleaned ready to cook or in fillet form.
|Wild Caught Barramundi||
(Season Feb-end Oct). Our supply is caught mainly from local fisherman or from the Gulf area out of Karumba. With delicate mild flavoured flesh Barramundi can be cooked grilled, steamed, fried, baked or Bbq'd. Being of delicate flesh the less handling while cooking the better. Wild Barramundi is available frozen all year round, when the season is closed we offer fresh, premium salt water farmed product.

This is our most popular species to serve in our Take-away section and ideal for Bbq and curries. It has a firm but tender white flesh and very mild in flavour. Don't be put off by the name Mackerel, all our Mackerels caught in the tropic waters have a delicate flavour and tender flesh. Fresh Mackerel is more prevalent from June to December.

Our premium fish caught in our local waters is in high demand as live product into the Asian market. With beautiful white, moist, sweet, flakey flesh this fish can be enjoyed all year round, cooked a number of ways. It is very adapt to Asian flavours and cooking styles. One to enjoy.
Another of our premium species this fish is a "Beauty". This mild flavoured tender flesh can be enjoyed cooked anyway.

All our prawns are sourced from the East Coast and Gulf of Carpentaria Fleets. They are available in various sizes and are able to be purchased loose or conveniently packed in 3kg export boxes. We also process them into user friendly Prawn Cutlets and Prawn Meat where all the work is already done for you.
The Varieties are:
Readily available the Banana Prawn is mainly sold "Green" (Uncooked). A versatile prawn ideal for any recipe that requires you to include Prawns. Great to marinate for the Bbq. Available already peeled as Cutlets or Skewered and Marinated.

A sweet tasting prawn with the looks to match. A very seasonal species not to passed down when available.
Not the prettiest but it is the tastiest. Preferably eaten boiled and chilled this is our award winning prawn.
Cooked Local Endeavour Prawns
With its bold red stripes this prawn is a winner displayed on any platter. Enjoyed by many with its firm flesh and mild flavour.
Often available in larger sizes, they are excellent Butterflied for the Bbq or cooked the old fashioned way, floured then egg battered.

The premium roe is mainly sold to the Japanese/Asian market as "Uni", it is mainly used in Japanese Sushi cuisine. With a soft buttery texture with distinct flavours of the Ocean, Oysters and Black Caviar(not the horse). Also sold in brine as "Kina", popular with the Maori and Samoan culture.
